Restoration Reserve Cabernet Sauvignon
Restoration is the purest expression of Edmonds Estates—a reserve Cabernet Sauvignon drawn from the finest, northernmost blocks of our vineyard. Nourished by natural springs and horizontal wells on our mountain, the vineyard yields fruit of uncommon depth, balance, and structure.
Restoration is designed to age gracefully while expressing the singular character of this rare valley. This reserve cabernet can be enjoyed on its own. While it pairs beautifully with small plates, it is equally compelling as a standalone, special occasion wine.
Winemaker Tasting Notes:
When it is first opened, you are met up front with dark fruit, black cherry, anise, graphite, and spice notes (baking spices, think subtle Thanksgiving notes). On the palate it is incredibly textured from front to finish with enough dry tannin remaining to show the age ability of this wine yet still a smooth sweetness on the mid palate allowing for it to be consumed on its own.
As the wine opens, you will notice more nuanced fruit notes like raspberries, there’s ripeness to the wine without it coming off porty as some Napa Cabernets can be, it is after some time, you will start to notice chocolate notes and that spice box becomes even more apparent. This wine changes in the glass and will have you just taking it all in, no rush, just in the moment.
With this time, and air the palate softens with the mid body becoming more profound, the drier tannins back off but the mouthfeel becomes more round, softer, but enough acid to carry it through for a long finish.
The selection for the components of this wine were taken from each of the three fermentations to create a complex blend. We make single vineyard, single vintage wines, so to create complexity we must vary our fermentation techniques as well as our oak selections. When all the components come back together, we get the best aspects of each lot. All the wines are natively fermented which adds another layer of complexity.
The wine was aged in 100% new French Oak for 28 months. This is a longer aging process than most wineries; the reason for that is the desired integration of the new oak and the softening of tannins.
Only two barrels were crafted and bottled in 2026.
This reserve is vinted and bottled at Leaf and Vine in Napa California.

Tim Keith is known for crafting site-driven wines that emphasize elegance, structure, and longevity. Raised in Napa and trained at UC Davis in Viticulture and Enology, Tim brings a generational understanding of the valley to his work. At Edmonds Estates, his approach allows Snell Valley’s rare terroir to define the wine, honoring the vineyard first and the vintage second. Tim and his father Rick have produced award winning wine that is made with minimal intervention; natively fermented and bottled unfiltered.
